A force of nature is a beautifully complex bean. Monsooning is the name of the process by which the coffee beans are exposed to the Asian
southwest monsoon. During this process the beans absorb moisture, which makes them swell and increase in size. The colour of the beans turn from pale green to a sandy yellow. The combination of the salty air, monsoon rain and wind, is what transformations both the look and the taste of this rather
special bean. The beans are then spread across the floor in large warehouses with open walls so that they can be exposed to the elements. During this time, monsoon winds sweep in and over the beans. After eight days, the beans are stacked in sacks and exposed to the further time in the monsoon wind until they crack. This process is repeated approximately every eight to ten days throughout the monsoon season.
